Thai Beef Curry recipe

On BT Toronto I made a simple Thai Massaman Curry using store-bought curry paste which you can find at most major grocery stores. I used the Thai Kitchen Massaman curry which is fairly mild and a bit sweet. But you can certainly use your favourite curry paste and play around with the ingredients you like.

BEEF CURRY

 

Makes: 6 servings

Prep Time: 20 minutes

Cook Time: 15 minutes

All you need

  • 3 tbsp (45 mL) vegetable oil, divided

  • 1 lb (500 g) beef for stir fry, sliced

  • 1 cup (250 mL) each sliced onions and diced potatoes

  • 3 tbsp (45 mL)  Thai Kitchen Massaman Curry Paste

  • 1 can (400 mL) Thai Kitchen Coconut Milk

  • 1 cup (250 mL) each diced tomato and diced green pepper

  • 1 tbsp (15 mL) fresh lime juice

  • 1 tsp (5 mL) red chili, seeded and chopped

 

All you do

  1. Heat 1 tbsp (15 mL) oil in a large skillet on medium high and add beef. Sauté for 5 minutes and reserve.

  2. Add remaining oil to pan with onions and potatoes. Cook for 2 minutes, then add curry paste and stir well to combine.

  3. Add coconut milk, tomatoes, green pepper and lime juice, simmer for 8-10 minutes. Add remaining ingredients including reserved beef and serve over rice or noodles.
